This Marinated Cucumbers, Onions, and Tomatoes dish is a light, refreshing side, perfect for summer gatherings or as an accompaniment to any meal, with a tangy marinade of vinegar, olive oil, and garlic.

Ingredients

2 cucumbers, thinly sliced

1 pint cherry or grape tomatoes, halved

1 small red or white onion, thinly sliced

¼ cup apple cider vinegar or red wine vinegar

2 tbsp extra virgin olive oil

1 clove garlic, minced

1 tbsp chopped fresh parsley or dill

Salt and pepper to taste

½ tsp red pepper flakes (optional)

Instructions

  1. In a large bowl, combine the thinly sliced cucumbers, halved cherry or grape tomatoes, and thinly sliced onions.
  2. In a separate small bowl, whisk together the apple cider vinegar (or red wine vinegar), olive oil, minced garlic, chopped parsley or dill, salt, pepper, and red pepper flakes (if using).
  3. Pour the dressing over the vegetables and toss to coat everything evenly.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, let it marinate for 1-2 hours.
  5. Give it a final stir before serving and enjoy!

Notes

If you prefer a sweeter version, add a teaspoon of honey, maple syrup, or a pinch of sugar to the marinade.

Experiment with different herbs such as basil, thyme, or oregano for varied flavors.

For a heartier option, add some feta cheese or grilled chicken.

Store leftovers in an airtight container in the fridge for up to 2 days. Freezing is not recommended.
