A delightful toast featuring roasted grapes, creamy ricotta cheese, and a drizzle of honey, topped with fresh rosemary for a perfect balance of sweet, savory, and aromatic flavors.

Ingredients

2 slices of ciabatta bread

1 cup grapes

1/2 cup ricotta cheese

1 tablespoon olive oil

Fresh rosemary sprigs

Honey for drizzling

Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the grapes in half and place them on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  3. Roast the grapes for 15-20 minutes, or until they begin to soften and caramelize.
  4. While the grapes are roasting, toast the ciabatta bread until golden and crispy.
  5. Spread ricotta cheese generously on each slice of toasted ciabatta.
  6. Once the grapes are done, remove them from the oven and let them cool slightly.
  7. Spoon the roasted grapes over the ricotta cheese on the toast.
  8. Garnish with fresh rosemary sprigs and drizzle with honey.
  9. Serve immediately and enjoy!

Notes

For added crunch, top with toasted walnuts or almonds.

Mascarpone, goat cheese, or cream cheese can be used as alternatives to ricotta.

Thyme or basil are great alternatives to rosemary if desired.

A sprinkle of cinnamon or nutmeg over the grapes can add a warm, spiced note.

The toast is best enjoyed fresh to maintain the crispiness of the bread.

Store leftover roasted grapes and ricotta separately for up to 2 days.
