Ingredients

2 cooked chicken breasts (grilled or rotisserie), sliced

1 large ripe mango, diced

4 cups mixed greens (arugula, spinach, romaine)

½ cup cherry tomatoes, halved

½ cucumber, thinly sliced

¼ red onion, finely sliced

1 avocado, diced

Fresh cilantro, chopped (optional)

3 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

1 teaspoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the sliced cooked chicken, diced mango, mixed greens, cherry tomatoes, cucumber, red onion, and diced avocado. Toss gently to mix everything together.
