Ingredients

1 large egg

2 tablespoons almond flour

1 tablespoon unsweetened cocoa powder

2 tablespoons granulated erythritol (or another keto-friendly sweetener)

1/2 teaspoon baking powder

1 tablespoon unsweetened almond milk (or any low-carb milk)

1 tablespoon melted butter or coconut oil

1/4 teaspoon vanilla extract

Pinch of salt

Instructions

  1. In a microwave-safe mug, whisk together the egg, almond flour, cocoa powder, erythritol, baking powder, almond milk, melted butter, vanilla extract, and a pinch of salt until smooth and well combined.
  2. Microwave the mug on high for 60-90 seconds, or until the cake has risen and is firm to the touch. (Start checking at 60 seconds.)
