These Keto Blondies are a rich, chewy, and dairy-free treat made with almond flour, golden monk fruit sweetener, and dairy-free butter. Perfect for a keto-friendly dessert with customizable mix-ins like chocolate chips or nuts.

Ingredients

2 cups almond flour

1 teaspoon baking powder

1 cup golden monk fruit sweetener

2 large eggs (or vegan substitutes)

½ cup dairy-free butter, softened

1 teaspoon vanilla extract

½ cup keto chocolate chips

½ cup mix-ins (chopped walnuts, pecans, macadamia nuts, or extra chocolate chunks)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, combine the almond flour, baking powder, and golden monk fruit sweetener. Stir until well mixed.
  3. Add the eggs (or vegan substitutes), softened dairy-free butter, and vanilla extract to the dry ingredients. Mix until smooth and well combined.
  4. Fold in the keto chocolate chips and your choice of mix-ins (nuts or extra chocolate chunks).
  5. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean, and the edges are golden brown.
  7. Allow the blondies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

For a nut-free version, omit the nuts and use additional chocolate chips or other keto-friendly ingredients like seeds.
