Kashmiri Pink Chai (Noon Tea) is a rich, aromatic tea from Kashmir made with green tea, spices, and a special technique that creates its signature pink color and velvety texture. Topped with crushed nuts, this chai is perfect for warming up or enjoying as a comforting treat.

Ingredients

4 cups water

2 tbsp Kashmiri/Himalayan green tea (or other green tea)

1/2 tsp baking soda

12 star anise

2 cardamom pods, crushed

1 cinnamon stick

1/4 tsp salt

2 cups whole milk

Sugar or honey to taste

Crushed nuts (e.g. almonds) for garnish (optional)

Instructions

  1. In a medium saucepan, bring 4 cups of water to a boil. Add the green tea leaves, star anise, crushed cardamom pods, cinnamon stick, salt, and baking soda. Allow to simmer for 10-15 minutes, stirring occasionally, until the mixture has reduced by about half.
  2. Add the 2 cups of whole milk to the simmering tea and bring it to a boil. Reduce heat and continue simmering for an additional 5-10 minutes, letting the milk blend with the tea and take on the pinkish hue.
  3. Once the chai has reached your desired color and strength, remove it from heat and add sugar or honey to taste, stirring until fully dissolved.
  4. Strain the chai into cups using a fine mesh sieve to remove the tea leaves and spices. Optionally, garnish with crushed almonds or your favorite nuts.
  5. Serve the Kashmiri Pink Chai hot, ideally paired with biscuits or a savory snack.

Notes

Kashmiri tea leaves are preferred, but high-quality green tea can be used if unavailable.

Full-fat milk is ideal for a creamy texture, but plant-based milk can be used for a dairy-free version, though consistency and flavor may vary.

Adjust the spices to your liking; add more cardamom or cinnamon for a stronger flavor.
