Ingredients

Jerk Cauliflower

  • 1 small head cauliflower, cut into small bite-sized pieces (yields ~5 cups or 450 g)
  • 3 Tbsp DIY Jamaican Jerk Seasoning (or store-bought jerk spice rub)
  • 1 ½ Tbsp olive oil or avocado oil
  • 1 Tbsp coconut aminos (substitute: 2 tsp tamari + 1 tsp maple syrup)

For Serving

  • 1 batch Zesty Mango Habanero Hot Sauce (or another sweet, fruity hot sauce)
  • 1 (15 oz.) can black beans, drained (or ~1 ½ cups homemade black beans)
  • 9 tortillas (~6-inch each), choice of corn or flour (for grain-free option use plantain tortillas)
  • 1 large avocado, sliced or guacamole

Additional Optional Toppings

  • Fresh mango, diced
  • Red onion, finely diced
  • Freshly chopped cilantro
  • Lime wedges

Instructions

  1. Prepare the Cauliflower: Preheat your oven to 425°F (220°C). Cut the cauliflower into small bite-sized florets, aiming for uniform pieces to ensure even cooking.
  2. Season the Cauliflower: In a large bowl, toss the cauliflower pieces with the DIY Jamaican Jerk Seasoning, olive or avocado oil, and coconut aminos until all florets are evenly coated with the spice mixture.
  3. Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet lined with parchment paper or a silicone mat. Roast in the oven for 20-25 minutes, flipping halfway through, until the cauliflower is tender and has crispy edges.
  4. Warm the Beans and Tortillas: While the cauliflower is roasting, warm the black beans on the stovetop or in the microwave. Also, warm the tortillas to softness by heating them on a dry skillet over medium heat or wrapped in foil in the oven.
  5. Prepare Toppings and Sauce: Slice the avocado or prepare guacamole. Dice fresh mango and red onion, chop cilantro, and cut lime wedges. Have the zesty mango habanero hot sauce ready for serving.
  6. Assemble the Tacos: To assemble, place a few cauliflower florets onto each tortilla, add a spoonful of black beans, slices of avocado, and drizzle with mango hot sauce. Top with optional diced mango, red onion, cilantro, and a squeeze of lime for added brightness.
  7. Serve Immediately: Serve the tacos fresh and warm for the best texture and flavor. Enjoy as a main dish for lunch or dinner with your favorite sides or salads.

Notes

  • Adjust the heat level of the jerk seasoning and mango habanero sauce according to your spice tolerance.
  • For a gluten-free meal, ensure your tortillas are made from corn or plantain.
  • You can substitute black beans with pinto or kidney beans if preferred.
  • The cauliflower can be roasted in an air fryer at 400°F (200°C) for 15-18 minutes, shaking halfway.
  • Use fresh lime juice to brighten flavors just before serving.
