Jalapeño Garlic Corn Fritters with Chipotle Aioli are crispy, savory fritters made with sweet corn, cheddar cheese, garlic, and a touch of jalapeño heat. Paired with a smoky, slightly sweet chipotle honey aioli, these fritters are perfect as a snack, appetizer, or side dish.
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup grated cheddar cheese
2 cloves garlic, grated
1 pinch of each kosher salt and black pepper
1/2 cup milk
1 egg, beaten
2 ears corn, kernels removed, from the cob (about 2 cups)
1 jalapeño, seeded (if desired) and chopped
2 tablespoons chopped fresh chives
Oil, for frying
For the Chipotle Honey Aioli:
1/2 cup avocado oil-based mayo
1–2 tablespoons lemon juice
1 clove garlic, grated
1 teaspoon honey
1/2 teaspoon chipotle chili powder
For extra heat, leave the seeds in the jalapeño or add a pinch of cayenne pepper to the fritter batter.
For a smoky flavor, swap the cheddar for Monterey Jack or pepper jack cheese.
For a vegetarian option, use a dairy-free cheese and substitute the milk with a plant-based alternative like almond or oat milk.
These fritters are best enjoyed immediately after frying, but they can be reheated in a skillet or air fryer for a few minutes to restore some crispiness.
