Jalapeño Garlic Corn Fritters with Chipotle Aioli are crispy, savory fritters made with sweet corn, cheddar cheese, garlic, and a touch of jalapeño heat. Paired with a smoky, slightly sweet chipotle honey aioli, these fritters are perfect as a snack, appetizer, or side dish.

Ingredients

3/4 cup all-purpose flour

1 teaspoon baking powder

1/4 cup grated cheddar cheese

2 cloves garlic, grated

1 pinch of each kosher salt and black pepper

1/2 cup milk

1 egg, beaten

2 ears corn, kernels removed, from the cob (about 2 cups)

1 jalapeño, seeded (if desired) and chopped

2 tablespoons chopped fresh chives

Oil, for frying

For the Chipotle Honey Aioli:

1/2 cup avocado oil-based mayo

12 tablespoons lemon juice

1 clove garlic, grated

1 teaspoon honey

1/2 teaspoon chipotle chili powder

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, cheddar cheese, grated garlic, kosher salt, and black pepper.
  2. Add the milk and beaten egg to the dry ingredients. Stir until well combined, forming a smooth batter.
  3. Stir in the corn kernels, chopped jalapeño, and fresh chives. Mix everything together until evenly distributed.
  4. Heat oil in a large skillet or frying pan over medium heat, enough to cover the bottom of the pan.
  5. Using a spoon or small ice cream scoop, drop spoonfuls of the corn batter into the hot oil, flattening them slightly with the back of the spoon. Fry in batches, cooking the fritters for about 2-3 minutes on each side or until they are golden brown and crispy. Remove from the pan and place them on a paper towel-lined plate to drain excess oil.
  6. While the fritters are frying, prepare the chipotle honey aioli. In a small bowl, combine the avocado oil-based mayo, lemon juice, grated garlic, honey, and chipotle chili powder. Stir until smooth and well combined.
  7. Serve the fritters warm with a generous side of chipotle honey aioli for dipping.

Notes

For extra heat, leave the seeds in the jalapeño or add a pinch of cayenne pepper to the fritter batter.

For a smoky flavor, swap the cheddar for Monterey Jack or pepper jack cheese.
