A delicious and easy-to-make baked zucchini dish with a cheesy blend of cheddar and Parmesan, topped with crispy breadcrumbs.

Ingredients

3 medium zucchini, sliced

2 cloves garlic, minced

2 tablespoons olive oil

Salt, to taste

Black pepper, to taste

120 grams cheddar cheese, shredded

50 grams Parmesan cheese, grated

100 grams breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini into rounds or half-moons, depending on your preference.
  3. In a large bowl, toss the zucchini slices with the minced garlic, olive oil, salt, and black pepper until well coated.
  4. Lay the seasoned zucchini slices in a single layer in a greased baking dish.
  5. Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the zucchini.
  6. Sprinkle the breadcrumbs over the cheese layer, ensuring an even coating.
  7. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly. The breadcrumbs should be golden brown and crispy on top.
  8. Once done, remove from the oven and serve immediately. Enjoy!

Notes

For extra flavor, sprinkle fresh or dried herbs like basil, thyme, or oregano on top before baking.

Swap cheddar or Parmesan with mozzarella, Gruyère, or goat cheese for a different flavor profile.
