These Homemade Cheesy Breadsticks are soft, fluffy, and topped with gooey mozzarella, garlic, and Italian herbs, creating a perfect side dish or snack. Enjoy them with pasta, as an appetizer, or on their own for a cheesy treat.

Ingredients

For the Dough:

2¼ tsp active dry yeast (1 packet)

1 cup warm water (about 110°F)

1 tsp sugar

2½ cups all-purpose flour

1 tsp salt

2 tbsp olive oil

1½ cups shredded mozzarella

¼ cup cheddar or Gruyère cheese (optional, for flavor boost)

3 tbsp unsalted butter, melted

2 cloves garlic, minced

1 tsp Italian seasoning

Optional: pinch of red pepper flakes or flaky salt

Instructions

  1. Prepare the Dough: In a small bowl, combine the warm water, sugar, and yeast. Stir and let it sit for about 5-10 minutes, or until it becomes frothy.
  2. Make the Dough: In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil, and stir until the dough starts to come together. Knead the dough on a lightly floured surface for about 5-7 minutes, or until it’s smooth and elastic.
  3. Let the Dough Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise for 1-1.5 hours, or until it has doubled in size.
  4. Preheat the Oven: Preheat your oven to 375°F (190°C) while the dough is rising.
  5. Shape the Dough: Once the dough has risen, punch it down and transfer it to a lightly floured surface. Roll the dough into a rectangular shape, about 10×6 inches, or to the desired thickness.
  6. Prepare the Topping: In a small bowl, mix together the melted butter, minced garlic, and Italian seasoning. Brush this mixture over the top of the dough.
  7. Add the Cheese: Sprinkle the shredded mozzarella evenly over the dough, followed by the optional cheddar or Gruyère cheese if using.
