Ingredients

Wet Ingredients

  • 1 ½ soft, ripe avocados, mashed
  • ½ cup maple syrup
  • 1 cup milk (can use dairy milk or preferred milk alternative)
  • ½ cup applesauce
  • ¼ cup olive oil
  • 1 tsp vanilla extract or vanilla bean paste

Dry Ingredients

  • 2 cups plain flour (white or wholemeal/whole wheat)
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp ground cinnamon

Add-ins

  • 1 cup dark chocolate chips (dairy-free if required)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly to prevent sticking.
  2. Mash Avocados: In a large mixing bowl, mash the ripe avocados until smooth and creamy, ensuring there are no large lumps.
  3. Combine Wet Ingredients: Add the maple syrup, milk, applesauce, olive oil, and vanilla extract to the mashed avocado. Mix thoroughly until all ingredients are well incorporated.
  4. Mix Dry Ingredients: In a separate bowl, sift together the plain flour, unsweetened cocoa powder, baking powder, and ground cinnamon to evenly distribute the leavening and spices.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the muffins tender.
  6. Add Chocolate Chips: Fold in the dark chocolate chips evenly throughout the batter to ensure each muffin has delicious pockets of chocolate.
  7. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full to allow room for rising.
  8. Bake Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool and Serve: Remove muffins from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
