This Healthy Chicken Salad with Apples is a refreshing, nutritious dish that’s both dairy-free and gluten-free. Made with canned chicken, fresh apples, crunchy vegetables, and a creamy almond milk yogurt dressing, it’s the perfect light lunch or meal prep option that’s easy to make and full of flavor!
20 oz canned chicken
1 Honeycrisp or Gala apple, cut into chunks
1/2 small sweet onion or 1/4 cup red onion, diced
3 stalks celery, finely diced
3 tablespoons mayonnaise
1–2 tablespoons Dijon mustard
1 cup plain almond milk yogurt
1/2 teaspoon garlic powder
Salt & pepper to taste
Drain the canned chicken and shred it with a fork or your hands in a large bowl.
Add the diced apple, onion, and celery to the bowl with the chicken.
In a separate small bowl, whisk together the mayonnaise, Dijon mustard, almond milk yogurt, garlic powder, salt, and pepper.
Pour the dressing over the chicken and vegetable mixture and stir until well combined.
Taste and adjust seasoning if needed by adding more salt, pepper, or mustard.
Serve immediately, or refrigerate for 30 minutes to let the flavors meld together.
