12 ounces uncooked macaroni

2 teaspoons olive oil

1 onion, finely chopped

12 ounces mushrooms, sliced

1 tablespoon minced garlic

1 1/4 lbs lean ground beef (90% lean recommended)

Salt and pepper to taste

3 (8-ounce) cans tomato sauce

1 (15-ounce) can diced tomatoes (with juice, petite cut preferred)

2 teaspoons Italian seasoning

2 cups shredded cheddar cheese

2 tablespoons chopped parsley

Cooking spray

Instructions

  • Preheat oven to 350°F (175°C). Spray casserole dish with cooking spray.

  • Cook macaroni according to package instructions until al dente; drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Sauté onion and mushrooms until tender, 5-7 minutes. Add garlic and cook 1 minute more.

  • Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat if needed.

  • Stir in tomato sauce, diced tomatoes with juice, and Italian seasoning. Simmer 5-10 minutes.

  • Add cooked macaroni to beef mixture and stir well.

  • Transfer to casserole dish; sprinkle with shredded cheddar cheese.

  • Bake uncovered for 20-25 minutes until cheese is melted and bubbly.

  • Garnish with chopped parsley before serving.

Notes

Substitute cheddar with mozzarella, Monterey Jack, or a cheese blend.

Add bell peppers or zucchini for extra veggies.

Spice it up with crushed red pepper flakes or hot sauce.

Use ground turkey or chicken for a leaner version.

Store leftovers refrigerated up to 3 days; freeze portions up to 2 months.
