This Ground Beef Zucchini Sweet Potato Skillet is a wholesome, one-pan meal packed with savory ground beef, tender zucchini, and sweet potato chunks. It’s seasoned with smoked paprika and oregano for a perfect balance of flavor and texture.

Ingredients

1 pound ground beef

2 medium zucchinis, diced

1 large sweet potato, peeled and cubed

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned and cooked through, about 5-7 minutes. Remove excess grease if necessary. Season with salt and pepper, and set the beef aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add cubed sweet potato and cook for 8-10 minutes, stirring occasionally, until tender and lightly browned.
  3. Add chopped onion and garlic to the skillet with sweet potatoes, cooking for 2-3 minutes until the onion is soft. Stir in diced zucchini and cook for another 4-5 minutes until tender.
  4. Return cooked ground beef to the skillet. Add smoked paprika, oregano, and salt & pepper. Stir well and cook for another 2-3 minutes, allowing the flavors to meld.
  5. Remove from heat and garnish with fresh parsley before serving.

Notes

For a spicier version, add red pepper flakes or chopped jalapeños.

Feel free to swap zucchini with bell peppers, mushrooms, or eggplant for a different flavor.

Butternut squash or carrots can be used in place of sweet potatoes.

For a lower-carb option, substitute sweet potatoes with cauliflower or turnips.
