Ingredients

2 zucchinis, cut into quarters lengthwise

1 tablespoon olive oil

1 lemon, juiced

1 teaspoon Italian seasoning

¼ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Zucchini: Wash the zucchinis and cut them into quarters lengthwise to create spears.

  • Season the Zucchini: In a small bowl, whisk together olive oil, lemon juice, Italian seasoning, garlic powder, salt, and pepper. Drizzle the mixture over the zucchini spears and toss gently to coat.

  • Preheat the Grill: Preheat the grill to medium heat (about 350°F or 175°C).

  • Grill the Zucchini: Place the zucchini spears on the grill and cook for 3-4 minutes per side, turning carefully until tender and slightly charred.
