Grilled zucchini spears are a simple, flavorful side dish, perfect for any summer barbecue or weeknight dinner. With lemon, olive oil, and Italian seasoning, these zucchini spears are smoky, tender, and full of fresh flavor.
2 zucchinis, cut into quarters lengthwise
1 tablespoon olive oil
1 lemon, juiced
1 teaspoon Italian seasoning
¼ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Fresh parsley, chopped (for garnish)
Prepare the Zucchini: Wash the zucchinis and cut them into quarters lengthwise to create spears.
Season the Zucchini: In a small bowl, whisk together olive oil, lemon juice, Italian seasoning, garlic powder, salt, and pepper. Drizzle the mixture over the zucchini spears and toss gently to coat.
Preheat the Grill: Preheat the grill to medium heat (about 350°F or 175°C).
Grill the Zucchini: Place the zucchini spears on the grill and cook for 3-4 minutes per side, turning carefully until tender and slightly charred.
Serve: Remove from the grill, garnish with chopped parsley, and serve immediately.
Storage: Leftover zucchini can be stored in an airtight container in the fridge for up to 2-3 days.
Reheating: Reheat on a grill, in a skillet, or in the microwave, though the texture may be softer.
Variations:
Add grated parmesan or mozzarella cheese during the last minute of grilling.
Spice things up with red pepper flakes or cayenne pepper.
Drizzle balsamic vinegar for a tangy twist.
Swap Italian seasoning for fresh rosemary, thyme, or oregano.
