Grilled California Avocado Chicken is a refreshing and flavorful dish that combines the smoky goodness of grilled chicken with the creamy richness of fresh avocado. Topped with juicy cherry tomatoes and melted cheese, it’s a perfect, satisfying meal.

Ingredients

For the Chicken & Marinade:

4 boneless skinless chicken breasts (or thighs)

3 tbsp olive oil

2 tbsp fresh lime juice

2 cloves garlic, minced

1 tsp paprika

1 tsp ground cumin

½ tsp salt

½ tsp black pepper

For the Toppings:

2 California avocados, sliced

1 cup cherry tomatoes, halved

1 cup shredded mozzarella or Monterey Jack cheese

Optional:

Chopped cilantro

Balsamic glaze

Diced red onion

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lime juice, garlic, paprika, cumin, salt, and pepper. Add the chicken and coat evenly. Marinate for at least 30 minutes.
  2. Preheat the Grill: Preheat grill to medium-high heat or use a grill pan over medium heat.
  3. Grill the Chicken: Grill chicken for 6-8 minutes per side or until internal temperature reaches 165°F (74°C). In the last minute of grilling, sprinkle cheese on chicken and close grill to melt.
  4. Prepare the Toppings: While chicken grills, slice avocados and halve tomatoes.
  5. Assemble the Dish: Place grilled chicken on a plate. Top with avocado slices, cherry tomatoes, and melted cheese.
  6. Garnish: Optionally, add cilantro, balsamic glaze, and red onion.
  7. Serve: Serve with rice, quinoa, or a side salad for a complete meal.

Notes

Use grilled portobello mushrooms for a vegetarian alternative.

For a spicier version, add chili flakes or jalapeños to the marinade.

For extra flavor, substitute balsamic glaze with a drizzle of lime crema.
