Simple, flavorful grilled broccoli with a smoky char, brightened with lemon and optionally topped with Parmesan cheese. Perfect as a healthy side dish.

Ingredients

2 heads of broccoli (3 heads for larger groups)

1 lemon, sliced

23 tablespoons extra virgin olive oil

Generous pinch of salt

Generous pinch of garlic salt

¼ cup shredded Parmesan cheese (optional)

Instructions

  1. Preheat grill to medium-high heat.
  2. Wash broccoli and cut into florets. Pat dry.
  3. Place broccoli in a large bowl. Drizzle with olive oil, sprinkle with salt and garlic salt, and toss to coat.
  4. Arrange broccoli on the grill in a single layer. Grill 8–10 minutes, turning occasionally, until slightly charred and tender.
  5. During the last 2 minutes, add lemon slices to the grill for caramelized flavor.
  6. Remove from grill, squeeze lemon over broccoli, and sprinkle with Parmesan if desired.
  7. Serve warm.

Notes

Add red pepper flakes for heat.

Drizzle with balsamic glaze for extra flavor.

Swap Parmesan for feta or pecorino.

Use roasted garlic instead of garlic salt.

Store leftovers in an airtight container in the fridge up to 3 days.

Reheat in a skillet 3–4 minutes or in the oven at 350°F (175°C) until hot. Avoid microwaving too long.
