Garlic Butter Steak Bites with Potatoes is a savory, hearty dish featuring tender sirloin steak cubes seared in garlic butter paired with crispy, golden roasted baby potatoes seasoned with fresh rosemary. This easy-to-make meal delivers rich flavors and comforting textures perfect for any occasion.
1 lb sirloin steak, cut into bite-sized pieces
1 lb baby potatoes, halved
3 tbsp butter, divided
4 cloves garlic, minced
1 tsp fresh rosemary (or thyme)
Salt and pepper, to taste
Fresh chopped parsley, for garnish
Preheat oven to 400°F (200°C). Toss halved baby potatoes with salt, pepper, and 1 tablespoon melted butter. Spread on a baking sheet and roast 25-30 minutes until crispy and golden, flipping halfway through.
While potatoes roast, heat 2 tablespoons butter in a large skillet over medium-high heat. Add steak pieces, season with salt and pepper, and cook 3-4 minutes, turning occasionally until browned and cooked to desired doneness.
Add minced garlic and fresh rosemary to the skillet with steak; cook 1-2 minutes until fragrant, stirring frequently to avoid burning.
Remove steak from heat; sprinkle with fresh parsley.
Serve garlic butter steak bites alongside roasted potatoes; garnish with extra parsley if desired.
Substitute thyme or oregano for rosemary for different herbal notes.
Add sautéed mushrooms or caramelized onions for extra flavor.
Use sweet potatoes or fingerlings instead of baby potatoes.
Sprinkle crushed red pepper flakes on steak for heat.
Finish with fresh lemon juice for brightness.
