Garlic Butter Steak Bites and Potatoes combines tender steak and crispy potatoes smothered in a rich garlic butter sauce. This easy one-pan dish is perfect for weeknight dinners or special occasions, offering savory flavors and satisfying textures.
For the Steak Bites and Potatoes:
¼ cup ghee or butter, divided
1 tablespoon olive oil
1 lb Yukon Gold potatoes, cut into ½ inch cubes
3 garlic cloves, minced
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon sea salt, plus more to taste
¼ teaspoon ground black pepper, plus more to taste
1 ¼ lb sirloin steak, cut into ½ inch cubes
Prepare the potatoes: In a large skillet, heat 2 tablespoons of ghee or butter and olive oil over medium heat. Add the cubed Yukon Gold potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until golden and crispy outside, tender inside. Remove the potatoes and set aside.
Cook the steak: In the same skillet, add the remaining 2 tablespoons of ghee or butter. Once melted, add the cubed sirloin steak. Season with thyme, oregano, salt, and pepper. Cook for 4-5 minutes until browned and cooked to your preferred doneness. Use a meat thermometer to check the internal temperature: 125°F (52°C) for rare, 135°F (57°C) for medium-rare, or 145°F (63°C) for medium.
Add garlic and combine: Add minced garlic to the steak and cook for 1-2 minutes until fragrant. Ensure the steak is well-coated with the garlic butter mixture.
Combine steak and potatoes: Return the potatoes to the skillet with the steak, tossing everything in the garlic butter sauce. Let everything simmer together for 2-3 minutes to meld the flavors.
Serve: Adjust seasoning with more salt and pepper if needed. Serve immediately, garnished with fresh herbs if desired.
Different potatoes: Substitute Yukon Gold potatoes with red potatoes or baby potatoes, adjusting the cooking time as needed.
Add veggies: Incorporate mushrooms, bell peppers, or green beans for added flavor and texture.
