Garlic Butter Rice is a rich and aromatic side dish made with buttery, garlicky rice, perfect for complementing any meal. This simple, flavorful dish is enhanced with fresh parsley and Parmesan cheese for an irresistible, comforting flavor.

Ingredients

4 tablespoons (2 oz. | 60g) butter, divided

5 cloves garlic, minced

1 1/2 cups uncooked white rice (long grain, Basmati, or Jasmine)

2 1/2 cups chicken broth, or vegetable stock

1 teaspoon dried parsley

1/2 teaspoon salt

1/4 teaspoon fresh cracked black pepper

2 tablespoons fresh chopped parsley, plus extra to garnish

Instructions

  1. Preheat the pan: In a large saucepan or skillet, melt 2 tablespoons of butter over medium heat.
  2. Sauté garlic: Add the minced garlic and sauté for 1-2 minutes until fragrant and golden. Be careful not to burn the garlic.
  3. Cook the rice: Stir in the uncooked rice, coating it with the garlic and butter mixture. Pour in the chicken broth (or vegetable stock), then add the dried parsley, salt, and black pepper. Stir to combine.
  4. Simmer: Bring the mixture to a simmer, then cover and reduce the heat to low. Let the rice cook for 18-20 minutes, until the liquid is absorbed and the rice is tender.
  5. Rest the rice: Once cooked, remove from heat and let the rice sit covered for 5 minutes.
  6. Finish with butter and parsley: Fluff the rice with a fork, then stir in the remaining 2 tablespoons of butter and fresh chopped parsley.
  7. Garnish: Garnish with extra parsley and serve warm!

Notes

You can swap the rice for brown rice, but it will require more water and a longer cooking time (about 40-45 minutes).

For a vegan version, substitute butter with olive oil and use vegetable stock.

If you like a more cheesy flavor, add Parmesan cheese at the end of cooking.

Add a squeeze of lemon juice for a fresh, zesty twist.
