This Frozen Peach Daiquiri recipe offers two refreshing variations featuring frozen peaches and pineapple for a naturally sweet and tropical twist. Blended with fresh mint, lime juice, and a touch of maple syrup, this cool drink is perfect for summer days or anytime you want a fruity, icy cocktail or mocktail. The option to add light rum makes it easily customizable to your preference for an adult beverage.

Ingredients

Fruit Base

  • 1 cup frozen sliced peaches (frozen at peak ripeness, about 1 peach or 140 g)
  • 1/2 cup frozen pineapple chunks (frozen at peak ripeness)

Liquids & Sweeteners

  • 2 Tbsp lime juice (freshly squeezed, about 1/2-1 lime yielding ~30 ml)
  • 2/3 cup water
  • 1/2-1 Tbsp maple syrup (adjust based on fruit sweetness; agave or other liquid sweeteners can be substituted)
  • 4-6 Tbsp light (white) rum (optional; if omitted, increase water by equivalent amount)

Add-ins

  • 1 Tbsp fresh mint leaves
  • 1/3 cup ice

Instructions

  1. Prepare ingredients: Measure out all frozen fruits, fresh mint, lime juice, maple syrup, water, ice, and rum (if using). Ensure peaches and pineapple are frozen at their peak ripeness for optimal sweetness and texture.
  2. Combine in blender: Add frozen peaches, pineapple chunks, fresh mint leaves, lime juice, maple syrup, ice, and water into the blender jar. If you prefer the alcoholic version, add light rum at this step.
  3. Blend until smooth: Pulse and blend mixture on high speed until fully smooth and slushy in consistency. This usually takes about 30-60 seconds depending on blender strength.
  4. Adjust consistency and sweetness: Taste the daiquiri and add more maple syrup for sweetness or water for a thinner consistency if desired. Blend again briefly to incorporate adjustments.
  5. Serve immediately: Pour the frozen peach daiquiri into chilled glasses. Garnish with additional fresh mint leaves, lime wedges, or peach slices if desired. Enjoy your refreshing frozen cocktail or mocktail!

Notes

  • For the best flavor and texture, use frozen fruits that were frozen at peak ripeness.
  • Maple syrup can be substituted with agave syrup, honey, or simple syrup according to preference.
  • Adjust rum quantity to your taste preference or omit entirely for a non-alcoholic version.
  • If you don’t have frozen fruit, you can use fresh peaches and pineapple combined with more ice, but the texture and chill will differ.
  • Mint leaves add a fresh herbal note; crush them gently before adding to release more flavor.
  • Use freshly squeezed lime juice instead of bottled for the best citrus brightness.
