These Frozen Copycat Yogurt Buster Bars offer a healthier twist on the classic treat with creamy Greek yogurt, peanut butter, and a rich chocolate coating, making for a delicious, guilt-free indulgence.

Ingredients

1 cup plain unsweetened greek yogurt

½ cup peanut butter

½ scoop PEScience Peanut Butter Cookie protein powder (15g)

3 tbsp mini dark chocolate chips

3 tbsp roasted peanuts

1 cup dark chocolate chips

1 tsp coconut oil

Instructions

  1. In a medium-sized bowl, mix the Greek yogurt, peanut butter, and protein powder until well combined.
  2. Stir in the mini dark chocolate chips and roasted peanuts.
  3. Spoon the mixture into molds or a parchment-lined dish, spreading it evenly.
  4. Freeze the yogurt mixture for about 2-3 hours or until firm.
  5. While the yogurt bars are freezing, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Once the bars are frozen, dip each bar into the melted chocolate, coating them completely.
  7. Place the coated bars back onto the parchment paper and freeze for an additional 30 minutes or until the chocolate has hardened.
  8. Remove from the freezer and enjoy!

Notes

If you don’t have PEScience Peanut Butter Cookie protein powder, any protein powder will work or you can omit it entirely for a more traditional frozen treat.

Add-ins like dried fruit, or a sprinkle of sea salt on top of the chocolate coating add extra flavor.

For a dairy-free version, substitute with dairy-free yogurt and check that the chocolate is dairy-free.
