These Fried Pineapple Rings are a tropical treat with a crispy coconut exterior and juicy, tender pineapple inside. Infused with coconut and dark rum, they’re served with a sweet cream cheese dip, making them a perfect indulgent snack or dessert.

Ingredients

8 pineapple rings

1 cup dark rum

1 cup coconut rum

1 1/2 cups all-purpose flour

1 (10-oz.) bag sweetened coconut flakes

2 large eggs

1/2 cup coconut milk

Vegetable oil, for frying

4 oz. cream cheese, softened

1/2 cup powdered sugar

Instructions

  1. In a medium bowl, whisk together the dark rum, coconut rum, eggs, and coconut milk.
  2. In another bowl, combine the all-purpose flour and sweetened coconut flakes. Mix well.
  3. Dip each pineapple ring into the rum mixture, then coat it in the flour-coconut mixture, pressing lightly to ensure it sticks.
  4. Heat vegetable oil in a large frying pan over medium heat. The oil should be hot enough for frying but not smoking.
  5. Carefully place the coated pineapple rings into the hot oil, frying them until golden brown and crispy, about 2-3 minutes on each side.
  6. Remove the fried pineapple rings from the oil and drain on paper towels.
  7. In a small bowl, whisk together the softened cream cheese and powdered sugar until smooth and creamy.
  8. Serve the fried pineapple rings warm, accompanied by the sweet cream cheese dip for dipping.

Notes

For extra flavor, add a sprinkle of cinnamon to the coconut-flake coating.

If you prefer a spicier taste, swap coconut rum for spiced rum.

These pineapple rings can also be made with other tropical fruits like mango or banana for a fun twist.

If you prefer a chocolatey dip, serve with a rich chocolate dip.
