These Fried Pineapple Rings are a tropical treat with a crispy coconut exterior and juicy, tender pineapple inside. Infused with coconut and dark rum, they’re served with a sweet cream cheese dip, making them a perfect indulgent snack or dessert.
8 pineapple rings
1 cup dark rum
1 cup coconut rum
1 1/2 cups all-purpose flour
1 (10-oz.) bag sweetened coconut flakes
2 large eggs
1/2 cup coconut milk
Vegetable oil, for frying
4 oz. cream cheese, softened
1/2 cup powdered sugar
For extra flavor, add a sprinkle of cinnamon to the coconut-flake coating.
If you prefer a spicier taste, swap coconut rum for spiced rum.
These pineapple rings can also be made with other tropical fruits like mango or banana for a fun twist.
If you prefer a chocolatey dip, serve with a rich chocolate dip.
For a less sweet alternative, serve with whipped cream, vanilla yogurt, or fruit salsa.
Fried pineapple rings are best enjoyed fresh, but leftovers can be stored for up to 2 days in the refrigerator.
