Foil pack grilled potatoes are a simple, flavorful side dish with crispy exteriors and tender interiors. Seasoned with garlic, butter, and Italian herbs, these potatoes are grilled to perfection with minimal cleanup, making them ideal for any occasion.

Ingredients

2 lbs red potatoes, cut into 1-inch cubes

1 tablespoon minced garlic

4 tablespoons butter, cut into small pieces

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon pepper

Instructions

  • Prepare the Potatoes: Wash the potatoes and cut them into 1-inch cubes.

  • Season the Potatoes: In a large bowl, combine the potatoes, garlic, Italian seasoning, salt, and pepper. Toss to coat evenly.

  • Create the Foil Packets: Lay out a large piece of aluminum foil (about 18 inches long). Place the seasoned potatoes in the center and top with butter pieces. Seal the foil tightly.

  • Grill the Potatoes: Preheat the grill to medium heat. Place the foil packet on the grill and cook for 20-25 minutes, turning occasionally, until tender when pierced with a fork.

  • Serve: Open the foil packet carefully (watch for steam) and serve directly or transfer to a dish.
