4 1/2 – 5 cups all-purpose flour, plus more for rolling
2 teaspoons kosher salt
6 tablespoons salted butter, at room temperature
2 sticks (1 cup) cold salted butter, sliced into thin pieces
1/2 cup granulated sugar
1 tablespoon ground cinnamon
1 egg, beaten, for brushing
