Easy Strawberry Goat Cheese Salad with Avocado

A refreshing and vibrant salad featuring fresh strawberries, creamy avocado, goat cheese, and toasted almonds, all drizzled with a homemade strawberry balsamic dressing.

Ingredients

6 cups fresh baby arugula

1 pint fresh strawberries, hulled and sliced

1 ripe avocado, peeled, pitted, and diced

4 ounces crumbled goat cheese

⅓ cup sliced almonds, toasted

For the dressing:

1 cup ripe fresh strawberries, hulled

⅓ cup avocado oil or light olive oil

¼ cup balsamic vinegar

2 tablespoons honey

¼ teaspoon kosher salt

Instructions

  1. Toast the sliced almonds by heating a small pan over medium heat. Stir occasionally and toast for about 3-4 minutes until golden brown. Remove from heat and set aside.
  2. In a blender or food processor, combine the hulled strawberries, avocado oil, balsamic vinegar, honey, and kosher salt. Blend until smooth and well combined. Taste and adjust seasoning if necessary (add more honey for sweetness or vinegar for tang).
  3. In a large bowl, toss the fresh baby arugula with the sliced strawberries and diced avocado. Gently mix everything together.
  4. Sprinkle the crumbled goat cheese and toasted almonds over the salad. Toss gently to incorporate.
  5. Drizzle the strawberry balsamic dressing over the salad and toss gently to coat the ingredients evenly.
  6. Serve immediately for a fresh and light meal or side dish.

Notes

If you don’t have sliced almonds, you can substitute with walnuts, pecans, or sunflower seeds for added crunch.

For a different flavor profile, swap the goat cheese with feta, blue cheese, or mozzarella.

If you prefer a different type of oil, you can use extra virgin olive oil in place of avocado oil.

This salad can be made vegan by skipping the cheese and replacing honey with maple syrup or agave nectar for the dressing.
