Pineapple Chicken and Rice is a vibrant, one-pan dish that combines tender chicken, sautéed vegetables, and sweet pineapple with savory spices. Quick to make, healthy, and perfect for a weeknight dinner or meal prep.

Ingredients

1 lb chicken breast, cubed

1 cup pineapple, cubed

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup jasmine rice

2 cups chicken broth

1 tablespoon soy sauce

1 teaspoon ginger, grated

Salt and pepper to taste

¼ cup green onions, sliced

1 tablespoon sesame seeds

Instructions

  1. Cook the rice: In a medium saucepan, combine jasmine rice and chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes, or until the rice is cooked. Remove from heat and set aside.
  2. Cook the chicken: Heat olive oil in a large skillet over medium heat. Add cubed chicken breast, season with salt and pepper, and cook for 6-8 minutes until browned and fully cooked. Remove from skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add chopped onion, minced garlic, and red bell pepper. Sauté for 3-4 minutes until tender.
  4. Combine ingredients: Stir in pineapple, soy sauce, and ginger. Cook for 2-3 minutes until the pineapple softens and the flavors combine.
  5. Add rice: Stir in cooked rice and combine all ingredients. Cook for an additional 2 minutes to heat the rice through.
  6. Garnish and serve: Remove from heat and garnish with green onions and sesame seeds. Serve immediately and enjoy!
