These Easy Pancake Poppers are light, fluffy, and bite-sized, making them a fun twist on traditional pancakes. Perfect for breakfast or a snack, they’re quick to make and customizable with toppings like chocolate chips, fresh fruit, or syrup.

Ingredients

1 1/2 cups all-purpose flour

3 1/2 teaspoons baking powder

3/4 teaspoon salt

1 tablespoon granulated sugar

1 cup plus 1 tablespoon milk

1 large egg

1 teaspoon vanilla extract

3 tablespoons unsalted butter, melted

1 large egg white

1/2 cup mini chocolate chips (optional)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.
  2. Prepare Wet Ingredients: In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.
  3. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix the batter to ensure the pancake poppers stay fluffy.
  4. Whisk the Egg White: In a small bowl, beat the egg white until stiff peaks form, then gently fold it into the pancake batter to add extra fluffiness.
  5. Add Chocolate Chips (Optional): If using chocolate chips, fold them into the batter.
  6. Cook the Pancake Poppers: Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray. Notes
