Easy Cheesy Ground Beef Quesadillas are quick, flavorful, and perfect for a satisfying meal or snack. Seasoned ground beef combined with melted mozzarella and cheddar cheeses inside warm flour tortillas creates a delicious Mexican-inspired dish ready in under 30 minutes.
6 flour tortillas (8-inch size)
1 pound ground beef
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon chili powder
¾ teaspoon cumin
½ teaspoon dried oregano
½ cup tomato sauce
½ tablespoon chopped cilantro
½ cup shredded mozzarella cheese
½ cup shredded cheddar cheese
Oil to grease the pan
Heat a skillet over medium heat. Cook ground beef, breaking it apart, until browned. Drain excess fat.
Add salt, garlic powder, onion powder, chili powder, cumin, and oregano; stir to combine.
Pour in tomato sauce and cook 2-3 minutes until heated through and slightly thickened. Remove from heat and stir in cilantro.
Heat a clean skillet over medium heat; lightly grease with oil.
Place one tortilla in skillet; sprinkle half the mozzarella and cheddar evenly.
Spread about ⅙ of the beef mixture over the cheese. Top with another ½ cup cheese, then cover with a second tortilla.
Cook 3-4 minutes until bottom tortilla is golden. Flip carefully and cook another 3-4 minutes until golden and cheese melts.
Remove and let cool a minute before slicing. Repeat with remaining tortillas and filling.
Add diced bell peppers, onions, or jalapeños for extra flavor and crunch.
Use Monterey Jack, pepper jack, or Mexican cheese blends as alternatives.
Add hot sauce or extra chili powder for spice.
Substitute beef with black beans or plant-based crumbles for a vegetarian option.
Serve with sour cream, guacamole, salsa, or pico de gallo.
