Ingredients

For the Caramelized Onions

  • 2 tablespoons butter
  • 2 brown or yellow onions
  • 2 teaspoons balsamic glaze

For the Pasta

  • 300 grams fresh pasta or 200 grams dried pasta
  • 80 grams butter
  • 2 teaspoons freshly cracked black pepper (more if desired)
  • ½ cup pasta water
  • 70 grams Parmesan, finely grated

Instructions

  1. Caramelize the Onions: Heat 2 tablespoons of butter in a large skillet over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until they are soft and golden brown, about 20-25 minutes. Stir in 2 teaspoons of balsamic glaze and cook for another minute to enhance the sweetness.
  2. Cook the Pasta: While the onions cook, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. Prepare the Sauce: In the skillet with the caramelized onions, add 80 grams of butter and the freshly cracked black pepper. Allow the butter to melt and infuse with the pepper’s heat.
  4. Toss Pasta and Finish: Add the drained pasta to the skillet, tossing to combine with the butter, onions, and pepper. Gradually add the reserved pasta water to loosen the sauce and help it coat the pasta evenly. Stir in the finely grated Parmesan until melted and the sauce becomes creamy.
  5. Serve: Plate the pasta immediately while hot. Optionally, add more cracked black pepper or Parmesan to taste for extra flavor.
