Ingredients

1 ½ cups all-purpose flour

1 ¼ cups granulated sugar

½ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 large eggs

¾ cup whole milk

½ cup unsalted butter, softened

1 teaspoon vanilla extract

¾ cup boiling water

For the frosting:

1 cup unsalted butter, softened

3 ½ cups powdered sugar

1 teaspoon vanilla extract

23 tablespoons heavy cream

A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. In a separate bowl, beat the eggs, milk, softened butter, and vanilla extract until smooth and combined.

  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

  5. Slowly add the boiling water to the batter. The batter will be thin, but that’s okay—it ensures a moist cupcake.

  6. Fill each cupcake liner about two-thirds full with batter.

  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cupcakes to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

  9. While the cupcakes cool, prepare the frosting. Beat the softened butter with an electric mixer until creamy.

  10. Gradually add powdered sugar, vanilla extract, and salt, beating until smooth.

  11. Add the heavy cream, one tablespoon at a time, until the frosting reaches your desired consistency.

  12. Once the cupcakes are completely cool, frost them generously with the buttercream frosting.

  13. Decorate with sprinkles, chocolate shavings, or any other toppings of your choice.

Notes

For a chocolate frosting variation, add ¼ cup cocoa powder to the frosting mix.

For extra flavor, you can add a filling to the cupcakes such as jam, chocolate ganache, or caramel.

For a vegan version, swap out the eggs with flaxseed eggs or aquafaba and use dairy-free butter and plant-based milk.
