Crockpot French Onion Meatloaf with Melted Swiss Cheese

A comforting twist on classic meatloaf, infused with the savory flavors of French onion soup and topped with caramelized onions and melted Swiss cheese.

Ingredients

900 grams ground beef

120 grams breadcrumbs

50 grams grated Parmesan cheese

60 milliliters whole milk

2 large eggs

15 milliliters Worcestershire sauce

5 grams fine sea salt

2 grams freshly ground black pepper

2 large yellow onions

28 grams unsalted butter

240 milliliters beef broth

8 slices Swiss cheese

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, whole milk, eggs, Worcestershire sauce, salt, and black pepper. Mix everything together gently until well combined.
  2. Shape the beef mixture into a loaf shape and place it into the bottom of your Crockpot. It should fit comfortably without overcrowding.
  3. Slice the yellow onions thinly. In a skillet, melt the butter over medium heat and add the onions. Sauté the onions, stirring occasionally, for about 15-20 minutes until they become golden brown and caramelized.
  4. Once the onions are caramelized, pour in the beef broth and stir to combine. Let the mixture simmer for 3-4 minutes, allowing the flavors to meld together.
  5. Pour the caramelized onion and broth mixture over the top of the meatloaf in the Crockpot, making sure the meatloaf is covered with the onions and liquid.
  6. Cover the Crockpot and cook on low for 6-8 hours, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  7. About 10 minutes before serving, place the slices of Swiss cheese over the top of the meatloaf. Cover the Crockpot and cook until the cheese has melted and is bubbly.
  8. Carefully remove the meatloaf from the Crockpot and slice it into portions. Serve with the caramelized onions and melted cheese on top. Enjoy!

Notes

For a vegetarian version, substitute the ground beef with plant-based ground meat.

For extra cheese flavor, add Gruyère or provolone along with or instead of Swiss cheese.

You can also use caramelized shallots for a sweeter, milder flavor.

If you don’t have beef broth, you can substitute with chicken or vegetable broth.
