Crispy Parmesan Potatoes are a delicious, golden-brown side dish made with halved baby potatoes coated in a savory mixture of parmesan cheese, panko breadcrumbs, and aromatic spices. These potatoes are oven-baked to achieve a perfectly crispy texture on the outside while remaining tender inside, served with a flavorful chipotle garlic mayonnaise dipping sauce for an extra kick.

Ingredients

Potatoes and Coating

  • 1/2 cup parmesan cheese, shredded
  • 2 tablespoons panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 3 tablespoons olive oil
  • 1.5 pounds baby potatoes, halved

Dipping Sauce

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 2 teaspoons chipotle chili powder
  • 1 tablespoon lemon juice

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough to crisp the potatoes nicely.
  2. Prepare Potatoes: Wash and halve the baby potatoes evenly to help them cook uniformly. Pat them dry to remove excess moisture for better crispiness.
  3. Make the Coating Mix: In a large bowl, combine the shredded parmesan cheese, panko breadcrumbs, garlic powder, poultry seasoning, smoked paprika, salt, and pepper. Stir together to evenly distribute all the seasonings.
  4. Toss Potatoes in Oil: Add the halved potatoes to the bowl with the olive oil and toss thoroughly until all pieces are coated with oil.
  5. Coat Potatoes with Seasoning: Add the parmesan and breadcrumb mixture to the potatoes and toss again until each potato half is well coated with the crispy mixture.
  6. Bake Potatoes: Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper or a lightly greased sheet. Bake for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crisp.
  7. Prepare Dipping Sauce: While the potatoes bake, mix together the mayonnaise, minced garlic, chipotle chili powder, and lemon juice in a small bowl. Stir well to combine and let the flavors meld.
  8. Serve: Once the potatoes are crispy and cooked through, remove from the oven and let cool slightly. Serve warm with the chipotle garlic dipping sauce on the side.

Notes

  • To ensure even cooking and crispiness, make sure potatoes are cut to uniform size.
  • For a spicier kick, increase the amount of chipotle chili powder in the dipping sauce.
  • Panko breadcrumbs add extra crunch; use gluten-free panko if needed for dietary preferences.
  • Leftover crispy potatoes can be reheated in the oven to restore crispiness instead of microwave reheating which makes them soggy.
  • This recipe can be doubled easily for larger gatherings.
