These Crispy Beef Tacos combine seasoned ground beef with melted cheddar cheese and crunchy corn tortillas for a delicious and satisfying meal that’s perfect for taco night.

Ingredients

Beef Mixture

  • 2 lbs lean ground beef
  • ½ onion, diced
  • 1 packet taco seasoning (~1 oz)
  • 15 oz Rotel (tomatoes and green chilis), drained

Other Ingredients

  • 4 cups shredded cheddar cheese, divided
  • 20 corn tortillas
  • Cooking oil, for frying

Instructions

  1. Prepare the Beef: In a skillet over medium heat, cook the lean ground beef and diced onion until the beef is browned and the onion is softened. Drain any excess fat.
  2. Add Seasoning and Rotel: Stir in the taco seasoning and the drained Rotel. Simmer for 5-7 minutes until the mixture is well combined and heated through.
  3. Assemble Tacos: Warm the corn tortillas slightly to make them pliable. Lay out a tortilla and sprinkle a small amount of shredded cheddar cheese on one half. Add a spoonful of the beef mixture on top of the cheese, then add a little more cheese on top of the beef. Fold the tortilla in half to enclose the filling.
  4. Fry Tacos: Heat cooking oil in a skillet over medium heat. Once hot, place the folded tacos in the oil and fry them until the tortillas are crispy and golden brown and the cheese inside has melted, about 2-3 minutes per side. Do not overcrowd the pan; fry in batches as needed.
  5. Drain and Serve: Remove the tacos from the oil and place on paper towels to drain excess oil. Serve immediately while hot and crispy.

  • To prevent tortillas from breaking, warm them before folding.
  • Use lean ground beef to reduce grease during cooking.
  • You can substitute cheddar cheese with a Mexican blend if preferred.
  • For less oil use, bake the assembled tacos at 400°F for 10-12 minutes until crispy.
  • Serve with salsa, sour cream, or guacamole for added flavor.
