These Spinach Dip Pinwheels are a delicious and easy-to-make appetizer featuring a creamy spinach dip spread inside soft spinach-flavored flour tortillas, rolled up and sliced into bite-sized pinwheels. Perfect for parties, game days, or any casual gathering, they offer a flavorful, crowd-pleasing snack that can be prepared in no time.

Ingredients

Dip Filling

  • 10 oz frozen chopped spinach, thawed and well-drained
  • 4 oz cream cheese, softened
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup Knorr Vegetable Recipe Mix (half packet)
  • 2 oz water chestnuts, chopped

Assembly

  • 4 spinach flour tortillas

Instructions

  1. Prepare the Spinach: Thoroughly thaw the frozen chopped spinach and squeeze out as much moisture as possible to prevent the dip from becoming watery.
  2. Make the Dip Mixture: In a mixing bowl, combine the softened cream cheese, mayonnaise, and sour cream. Add the Knorr Vegetable Recipe Mix and stir until well blended. Fold in the drained spinach and chopped water chestnuts, mixing evenly to create a creamy spinach dip.
  3. Assemble the Pinwheels: Lay out each spinach flour tortilla on a clean flat surface. Spread an even layer of the spinach dip mixture over the entire surface of each tortilla.
  4. Roll and Chill: Carefully roll each tortilla tightly into a log shape. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to firm up, making them easier to slice.
  5. Slice and Serve: After chilling, remove the plastic wrap and slice each roll into 1-inch pinwheels. Arrange on a serving platter and serve chilled as a tasty appetizer or snack.

Notes

  • Make sure to drain the spinach thoroughly to avoid soggy pinwheels.
  • If you prefer a vegetarian option, ensure the Knorr Vegetable Recipe Mix does not contain any animal-derived ingredients.
  • For added flavor, you can sprinkle some shredded cheese over the spread before rolling.
  • Store leftover pinwheels covered in the refrigerator and consume within 2 days for best freshness.
  • Feel free to substitute water chestnuts with finely chopped celery or nuts for a different crunch.
