This incredibly simple Vegan Creamy Mushroom Ramen is a rich and flavorful 15-minute meal that only requires a handful of ingredients!

Ingredients

1/2 Tbsp cooking oil

4 oz. baby bella mushrooms

1.5 cups vegetable broth

1 handful fresh spinach

1 package ramen noodles (discard seasoning packet)

1/2 cup coconut milk (canned)

Optional Garnishes: 1 green onion (sliced), 1 Tbsp chili garlic sauce or sriracha

Instructions

  1. Slice mushrooms and sauté in oil until soft and dark.
  2. Add vegetable broth to pot, bring to boil.
  3. Add ramen noodles (discard seasoning packet), cook 3 mins until tender.
  4. Turn off heat, add spinach, stir until wilted.
  5. Stir in coconut milk, combine well.
  6. Serve as-is or garnish with green onion or chili garlic sauce.

Notes

Use fresh spinach for the best flavor and texture.

Feel free to adjust the level of spice using chili garlic sauce or sriracha.

This dish is vegan and can be made gluten-free with gluten-free ramen noodles.
