A refreshing and colorful fruit salad tossed in a creamy homemade vanilla dressing. Perfect as a light dessert or side dish for summer gatherings, brunch, or holidays.

Ingredients

1 ½ cups 1% milk

1/4 cup granulated sugar (or 3 tbsp for less sweet dressing)

1 ½ tablespoons corn starch

2 teaspoons vanilla extract

2 cups fresh strawberries, quartered (260 g)

1 cup fresh blueberries (150 g)

1 cup fresh blackberries (135 g)

1 cup mandarin oranges, canned and drained (189 g or 284 ml can)

1 cup fresh pineapple chunks (155 g)

1 cup red grapes (173 g)

2 kiwi, peeled and sliced

Instructions

  1. In a small saucepan, whisk together the milk, sugar, and corn starch until smooth.
  2. Place over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble.
  3. Remove from heat and stir in the vanilla. Let the dressing cool completely.
  4. Prepare all the fruit by washing, peeling, slicing, and chopping as needed.
  5. In a large mixing bowl, combine all the fruit.
  6. Gently fold the cooled vanilla dressing into the fruit until evenly coated.
  7. Chill for at least 1 hour before serving to allow the flavors to meld.

Notes

Swap in seasonal fruits such as peaches, pears, or mangoes.

Use Greek yogurt instead of the milk-based dressing for a tangy twist.

Add shredded coconut or chopped nuts for extra texture.

Replace sugar with honey or maple syrup for a natural sweetener.
