Ingredients

For the Cake:

8 oz cream cheese, softened

1/2 cup vegetable oil

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

For the Glaze (optional):

1/4 cup powdered sugar

12 tablespoons milk or cream

Instructions

Make the Cake:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

  2. Mix the Wet Ingredients: In a large bowl, beat softened cream cheese, vegetable oil, and sugar until smooth and creamy (about 3-4 minutes).

  3. Add the Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Combine the Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt.

  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

  6. Bake the Cake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted comes out clean and the cake is golden on top.

  7. Cool the Cake: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Make the Glaze (Optional):

  1. Prepare the Glaze: In a small bowl, whisk together powdered sugar and milk (or cream) until smooth. Adjust the consistency with more milk if needed.

  2. Glaze the Cake: Once the cake is fully cooled, drizzle the glaze over the top.

Serve:

  1. Slice and Serve: Slice into wedges and enjoy! You can pair it with fresh fruit or whipped cream for extra indulgence.

Notes

Fruit Toppings: Add fresh berries or fruit compote for extra sweetness and freshness.

Flavored Glaze: Add lemon juice or almond extract to the glaze for a different flavor twist.

Chocolate Chips: Fold in chocolate chips for a chocolatey variation.
