This Cream Cheese Cake is a light and indulgent dessert that combines the creamy richness of cream cheese with a soft, fluffy cake base. Topped with an optional glaze, it’s the perfect treat for any occasion. Whether served on its own or with fresh fruit, this easy-to-make cake is sure to impress!
For the Cake:
8 oz cream cheese, softened
1/2 cup vegetable oil
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
For the Glaze (optional):
1/4 cup powdered sugar
1–2 tablespoons milk or cream
Make the Cake:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
Mix the Wet Ingredients: In a large bowl, beat softened cream cheese, vegetable oil, and sugar until smooth and creamy (about 3-4 minutes).
Add the Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine the Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Bake the Cake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted comes out clean and the cake is golden on top.

Prepare the Glaze: In a small bowl, whisk together powdered sugar and milk (or cream) until smooth. Adjust the consistency with more milk if needed.
Glaze the Cake: Once the cake is fully cooled, drizzle the glaze over the top.
