1/2 teaspoon salt

1 teaspoon vanilla extract

Instructions

  1. Pulse pistachios in a food processor until finely chopped but not powdery.

  3. Transfer to a bowl and stir in shredded coconut, reserving some for rolling.

  4. Shape mixture into 1-inch balls using your hands.

  5. Roll each ball in reserved shredded coconut to coat.

  6. Refrigerate on a plate or baking sheet for at least 30 minutes to firm up before serving.

Notes

Substitute pistachios with almonds, walnuts, or cashews.

Use dried cherries or raisins instead of cranberries.

Add chia seeds or flaxseeds for extra nutrition.

Roll in cocoa powder or crushed nuts for variety.

Add cinnamon or nutmeg for warm spices.
