Cinnamon Sugar French Toast Muffins combine the fluffy texture of muffins with the comforting flavors of French toast, topped with a delightful cinnamon-sugar coating.

Ingredients

Muffins:

2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 cup milk

1 teaspoon vanilla extract

Cinnamon Sugar Coating:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups.
  2. Prepare the muffin batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar. In a separate bowl, whisk the melted butter, eggs, milk, and vanilla extract until fully combined.
  3. Combine the wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. It’s okay if the batter is slightly lumpy.
  4. Fill the muffin tin: Divide the batter evenly among the 12 muffin cups, filling each about 3/4 of the way full.
  5. Bake the muffins: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
  6. Prepare the cinnamon sugar coating: Mix the sugar and cinnamon in a small bowl. Melt the butter in another small bowl.
  7. Coat the muffins: Dip the tops of each muffin in the melted butter, then roll them in the cinnamon sugar mixture.
  8. Serve and enjoy: Allow the muffins to cool slightly more before serving, or store in an airtight container for later.

Make-ahead: Muffins can be made 1 day in advance and stored in an airtight container.

Vegan Option: Use flax eggs and non-dairy butter and milk to make these muffins vegan-friendly.

For a different flavor, try using brown sugar or coconut sugar for the cinnamon sugar coating.
