Ingredients

1 pound (about 1215) large strawberries, thoroughly rinsed and patted dry

6 ounces (1 cup) semi-sweet chocolate chips

4 ounces cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

¼ cup heavy cream, cold

Instructions

  • Line a baking sheet with parchment paper and set aside.

  • Rinse strawberries thoroughly and pat dry. Hull the center of each strawberry using a small paring knife.

  • Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval, until smooth.

  • Dip each strawberry into the melted chocolate, covering as much or as little as you like. Place the dipped strawberries on the parchment-lined baking sheet.

  • Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth.

  • Add cold heavy cream to the mixture and beat for an additional 2 minutes until fluffy.

  • Chill the cheesecake filling in the refrigerator for 15 minutes.

  • Transfer the chilled filling into a piping bag and pipe a small amount into the center of each chocolate-covered strawberry.

  • If the filling is too soft, refrigerate the strawberries for 10-15 minutes to firm up.

  • Serve immediately or refrigerate for up to 12 hours for the best texture and flavor.

Notes

Storage: Keep these bites in an airtight container in the fridge for up to 12 hours. They are best served fresh.

Variations: Try using dark chocolate, adding a dash of cinnamon or citrus zest to the filling, or rolling the strawberries in crushed nuts for added texture.
