Satisfy your sweet cravings with these decadent Chocolate Covered Strawberry Cheesecake Bites! 1 pound (about 12–15) large strawberries, thoroughly rinsed and patted dry
6 ounces (1 cup) semi-sweet chocolate chips
4 ounces cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
¼ cup heavy cream, cold
Line a baking sheet with parchment paper and set aside.
Rinse strawberries thoroughly and pat dry. Hull the center of each strawberry using a small paring knife.
Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval, until smooth.
Dip each strawberry into the melted chocolate, covering as much or as little as you like. Place the dipped strawberries on the parchment-lined baking sheet.
Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth.
Add cold heavy cream to the mixture and beat for an additional 2 minutes until fluffy.
Chill the cheesecake filling in the refrigerator for 15 minutes.
Transfer the chilled filling into a piping bag and pipe a small amount into the center of each chocolate-covered strawberry.
If the filling is too soft, refrigerate the strawberries for 10-15 minutes to firm up.
Serve immediately or refrigerate for up to 12 hours for the best texture and flavor.
Storage: Keep these bites in an airtight container in the fridge for up to 12 hours. They are best served fresh.
