These Chicken Kabobs are the perfect summer dish, offering tender, marinated chicken and grilled vegetables on skewers for a healthy, flavorful meal. Ingredients

Chicken & Vegetables:

6 long bamboo skewers (or metal skewers)

1 lb boneless skinless chicken breast, cut into 1.5-inch pieces

2 large bell peppers, cut into 1.5-inch pieces

2 medium zucchini, sliced into 1/2-inch rounds

1 large red onion, cut into 1.5-inch pieces

Marinade:

1/2 cup olive oil

1/2 cup lemon juice

2 cloves garlic, minced

2 tbsp fresh dill, chopped

2 tbsp fresh parsley, chopped

1 tbsp sea salt

1/2 tsp black pepper

Instructions

  1. Prepare the Marinade:
    In a bowl, whisk together olive oil, lemon juice, minced garlic, fresh dill, fresh parsley, sea salt, and black pepper. Adjust seasoning as needed.

  2. Marinate the Chicken:
    Place chicken pieces in a resealable bag or shallow dish. Pour half the marinade over the chicken and toss to coat. Seal and refrigerate for at least 30 minutes.

  3. Prepare the Vegetables:
    While the chicken marinates, cut bell peppers, zucchini, and onion into uniform 1.5-inch pieces. Soak bamboo skewers in water for 30 minutes if using.

  4. Assemble the Kabobs:
    Thread chicken and vegetables onto skewers, alternating between them for a balanced skewer.

  5. Grill the Kabobs:
    Preheat grill to medium-high heat. Grill the kabobs for 10-12 minutes, turning occasionally, until the chicken reaches 165°F (75°C) and vegetables are tender with grill marks.

  6. Serve:
    Let the kabobs rest for a few minutes before serving. Optionally drizzle with the remaining marinade.

Notes

Vegetarian Version: Use mushrooms, cherry tomatoes, eggplant, and squash instead of chicken.

Spicy Kick: Add red pepper flakes or chili powder to the marinade.
