Chicken Avocado Melt Sandwich

A hearty Chicken Avocado Melt Sandwich with juicy chicken, creamy avocado, melted cheese, and fresh vegetables, all toasted to perfection.

Ingredients

2 boneless skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 avocado, sliced

4 slices of your favorite cheese (Swiss, cheddar, or provolone)

4 slices of bread (sourdough, ciabatta, or your choice)

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 small red onion, thinly sliced

1 tomato, sliced

Butter or olive oil for grilling the sandwiches

Instructions

  1. Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked through and golden brown. Once cooked, remove from the skillet and let it rest for a few minutes before slicing it thinly.
  2. While the chicken is cooking, mix the mayonnaise and Dijon mustard in a small bowl. Spread this mixture evenly on one side of each slice of bread.
  3. Place a slice of cheese on top of the mayo-mustard spread on each slice of bread.
  4. After the chicken has rested and been sliced, layer the sliced chicken on top of the cheese. Then add slices of avocado, red onion, and tomato.
  5. Top with another slice of cheese and place the second slice of bread on top, with the mayo-mustard side facing inwards.
  6. Heat a large skillet or griddle over medium heat. Butter the outside of each sandwich or brush with olive oil.
  7. Grill the sandwiches for 3-4 minutes on each side or until golden brown and the cheese is melted. You can press down slightly with a spatula to help the sandwich grill evenly.
  8. Once grilled, remove the sandwiches from the pan, slice, and serve immediately.

Notes

Feel free to swap the chicken with turkey, grilled shrimp, or a veggie patty for a different option.

Add extra veggies like lettuce, spinach, or pickles for more crunch and freshness.

Experiment with different cheeses like gouda, mozzarella, or feta for different flavor profiles.

Add a few slices of jalapeƱo or hot sauce if you prefer some heat.
