Ingredients

Wraps:

4 low-carb tortillas (68 inch diameter; 4–6g net carbs each)

Sauce:

½ cup pizza sauce (2 tbsp per roll-up)

Cheese:

1 cup shredded mozzarella cheese (¼ cup per roll-up)

Meat:

16 slices pepperoni (4 slices per roll-up; turkey pepperoni optional)

Seasonings:

½ teaspoon Italian seasoning

Finishing:

Olive oil spray (optional, for crispy finish)

Optional Add-Ins:

¼ cup sliced black olives

¼ cup sautéed mushrooms

Fresh basil or spinach

Crushed red pepper flakes

Instructions

  1. Prepare the tortillas: Lay out the low-carb tortillas on a clean surface.
  2. Add the sauce: Spread 2 tablespoons of pizza sauce evenly on each tortilla, leaving a border around the edges.
  3. Layer the cheese and meat: Sprinkle ¼ cup of shredded mozzarella cheese on top of the sauce, then layer 4 slices of pepperoni over the cheese.
  4. Season and add optional ingredients: Sprinkle a pinch of Italian seasoning, and optionally add black olives, mushrooms, basil, spinach, or red pepper flakes.
  5. Roll up the tortillas: Carefully roll each tortilla, ensuring the ingredients are tightly wrapped inside.
  6. Finish for a crispy exterior (optional): Lightly spray the outside of each roll with olive oil spray. Place rolls seam-side down in a skillet over medium heat.
  7. Cook the pizza rolls: Cook for about 2-3 minutes per side, or until golden brown and crispy, and the cheese inside is melted.
  8. Serve and enjoy: Once crispy and golden, remove from heat and slice into bite-sized pieces if desired. Serve with extra pizza sauce for dipping.

Notes

Vegetarian Option: Skip the pepperoni and add extra veggies like bell peppers, onions, or zucchini.

For a cheesier experience, add a second layer of cheese or use a cheese blend of mozzarella, cheddar, and Parmesan.

For a spicier kick, add jalapeños or hot sauce inside the roll.

Can bake instead of frying: Bake at 375°F (190°C) for 10-12 minutes until crispy and melted.
