Cheesy One Pot Beef and Potatoes is a comforting, one-pan meal that combines tender potatoes, savory ground beef, vibrant peppers, and gooey melted cheddar. Perfect for easy weeknight dinners or casual gatherings, this dish delivers rich flavors and minimal cleanup.

Ingredients

1 tbsp olive oil

1 tbsp unsalted butter

1.8 pounds starchy potatoes (preferably white), diced

2 Romano or bell peppers, chopped

1.1 pounds lean ground beef

1 yellow onion, finely chopped

2 garlic cloves, minced

1 tsp sweet paprika

1 tsp black pepper

1 tsp Italian seasoning

½ tsp salt

½ tsp chili flakes

2 tbsp double concentrated tomato paste

2 tbsp chopped parsley, plus more for serving

2 cups chicken broth

1½ cups grated cheddar cheese

Instructions

  1. Heat olive oil and butter in a large heavy-bottomed pot over medium heat.
  2. Add the diced potatoes and chopped peppers. Cook, stirring occasionally, until the potatoes start to soften, about 5–7 minutes.
  3. Push the vegetables to one side of the pot. Add the ground beef to the other side and cook until browned, breaking it apart with a spoon.
  4. Stir in the onion and garlic. Sauté until fragrant and the onion becomes translucent, about 2–3 minutes.
  5. Sprinkle in the paprika, black pepper, Italian seasoning, salt, and chili flakes. Stir to coat evenly.
  6. Mix in the tomato paste and chopped parsley, cooking for another minute to release flavors.
  7. Pour in the chicken broth and stir everything together. Bring to a gentle simmer, then reduce heat to medium-low and cover. Simmer until the potatoes are tender and the liquid has slightly reduced, about 15–20 minutes.
  8. Remove the lid and sprinkle grated cheddar cheese over the top. Cover again until the cheese melts, about 2–3 minutes.
  9. Garnish with extra chopped parsley before serving.
