Cheesy Beef Enchiladas Tortellini is a delicious fusion of two comfort food classics: beef enchiladas and cheesy tortellini. This dish combines seasoned beef, tortellini, and enchilada sauce for a hearty, flavorful meal.

Ingredients

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 tablespoon taco seasoning

1 package (9 oz) cheese tortellini

2 cups shredded cheddar cheese

1 cup enchilada sauce

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (optional for garnish)

Salt and pepper to taste

Olive oil for cooking

Instructions

  1. Cook the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes. Add the ground beef and cook until browned and fully cooked, breaking it apart as it cooks.
  2. Add the Beans and Tomatoes: Stir in the black beans, diced tomatoes with green chilies, taco seasoning, salt, and pepper. Let it simmer for about 5 minutes to allow the flavors to meld together.
  3. Cook the Tortellini: While the beef mixture is simmering, cook the tortellini according to the package instructions. Once cooked, drain and set aside.
  4. Assemble the Dish: In a large casserole dish, layer the cooked tortellini, beef mixture, and 1 1/2 cups of shredded cheddar cheese. Pour the enchilada sauce evenly over the top. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  5. Bake: Preheat your oven to 375°F (190°C). Bake the casserole for 20 minutes, or until the cheese is melted and bubbly.
  6. Serve: Remove from the oven and allow it to cool for a few minutes. Top with sour cream and fresh cilantro, if desired, and serve.

Notes

You can use ground turkey, chicken instead of ground beef for a different flavor.

For a spicier dish, add diced jalapeños or use a spicy enchilada sauce.

Vegetarians can replace the meat with sautéed vegetables or meat alternatives like lentils or tofu.
