1 small head cauliflower, chopped into small florets

¾ cup dry quinoa
1½ cups vegetable stock

1 cup panko breadcrumbs
1 large egg
3 tablespoons butter
1 medium sweet onion, peeled and sliced into ¾” slices
16–20 medium cremini mushrooms, sliced
3 medium cloves garlic, minced
5 large slices aged Havarti or Swiss cheese
5 burger buns, toasted if desired
