Cajun Shrimp Tartlets are the perfect appetizer, combining spicy Cajun shrimp with creamy avocado filling in crispy phyllo shells. Topped with fresh pico de gallo and cilantro, these bite-sized delights are sure to impress at any party or gathering.
For the Filling:
1 medium ripe avocado, peeled
2 to 3 tablespoons cream cheese, softened
½ teaspoon fresh lime juice
¼ teaspoon salt
¼ teaspoon pepper
For the Shrimp:
1 to 2 tablespoons avocado oil
12 uncooked shrimp (26–30 per pound), peeled and deveined
2 teaspoons Cajun seasoning
For the Tartlets:
12 miniature phyllo tart shells
Pico de gallo, for garnish
Fresh minced cilantro, for garnish
Prepare the avocado filling: In a small bowl, mash the avocado with a fork until smooth. Stir in softened cream cheese, lime juice, salt, and pepper until creamy.
Cook the shrimp: Heat 1 to 2 tablespoons avocado oil in a skillet over medium heat. Sprinkle Cajun seasoning over the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
Assemble the tartlets: Spoon the avocado mixture into each phyllo tart shell, filling about halfway.
Top with shrimp: Slice the shrimp into smaller pieces if desired and place one shrimp on each tartlet.
Garnish and serve: Top each tartlet with pico de gallo and a sprinkle of fresh cilantro. Serve immediately.
Add cheese: For extra creaminess, add shredded cheddar or Monterey Jack to the avocado filling.
Spicy kick: Add a dash of hot sauce or finely chopped jalapeños to the avocado filling for more heat.
Use cooked shrimp: If short on time, use pre-cooked shrimp, season with Cajun seasoning, and heat briefly in the skillet.
