Cajun Shrimp Sweet Potato Bites combine crispy sweet potato fries, spicy Cajun shrimp, and a tangy guacamole topping for a delicious and flavorful appetizer or snack. A perfect balance of textures and tastes that’s both satisfying and nutritious.

Ingredients

1 sweet potato, sliced into 1/4” slices

2 tablespoons olive oil

Salt to season

4 small avocados

1/2 cup cilantro

Juice of 1 lime (about 23 tablespoons)

1 1/2 tablespoons red wine vinegar

1/2 teaspoon red pepper flakes

Salt to taste

1 lb. large raw shrimp, peeled and deveined

1/2 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon sea salt

1/4 teaspoon chipotle chili powder

1 tablespoon olive oil

Instructions

  1. For the Sweet Potato Fries: Preheat the oven to 400°F (200°C). Slice the sweet potato into 1/4″ thick rounds and arrange them in a single layer on a baking sheet. Drizzle olive oil over the sweet potato slices, then toss them to coat evenly. Sprinkle with salt to taste and bake for 20-25 minutes, flipping halfway through until they are tender and slightly crispy around the edges.
  2. For the Guacamole: In a bowl, mash the avocados with a fork until smooth but still chunky. Add cilantro, lime juice, red wine vinegar, red pepper flakes, and salt to taste. Stir until well combined. Adjust seasoning if needed, and set aside until ready to serve.
  3. For the Cajun Shrimp: In a small bowl, combine the smoked paprika, cumin, sea salt, and chipotle chili powder. Toss the shrimp in the spice mix until evenly coated. Heat olive oil in a skillet over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes per side or until the shrimp turn pink and are fully cooked. Remove from heat and set aside.
  4. To Assemble: Once the sweet potato fries are done, arrange them on a serving platter. Top each sweet potato slice with a dollop of guacamole. Place one Cajun shrimp on top of each sweet potato slice and serve immediately.

Notes

For more heat, increase the amount of chipotle chili powder or add a splash of hot sauce to the shrimp or guacamole.

For a plant-based version, skip the shrimp and top the sweet potato bites with guacamole and roasted chickpeas or black beans.

If you want to make this dish spicier, add extra red pepper flakes or cayenne pepper to the guacamole.

For extra creaminess in the guacamole, add a tablespoon of sour cream or Greek yogurt.
