Ingredients

2 slices of sourdough bread

1 cup butternut squash, roasted and cubed

1/4 cup feta cheese, crumbled

1 tablespoon balsamic glaze

Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Place the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While the squash is roasting, toast the slices of sourdough bread until crispy.
  3. Once the squash is done, remove it from the oven and set aside.
  4. To assemble the toast, top each slice of sourdough with the roasted butternut squash cubes.
  5. Sprinkle crumbled feta cheese over the squash.
  6. Drizzle the balsamic glaze over the top and garnish with fresh parsley.
